Capilungo cafe introduces Lecce’s traditional Lamb Cake for Easter
In the heart of Covent Garden, the renowned Leccese cafe Capilungo, hailing from South Italy, is set to delight Londoners and visitors alike with a very special Easter offering: Puglia’s traditional Lamb Cake. This hyper-regional delicacy is a sweet jam-filled almond cake, meticulously crafted to resemble a spring lamb, as the name already gives a hint. Available in the run-up to Easter, the dessert is the latest and exciting addition to Capilungo’s array of freshly baked sweet and savoury Italian treats, including pasticciottos, rusticos, and tortinos.
Master baker Luca Capilungo, the creative mind behind the project’s authentic menu, uses the finest ground almond paste, sourced from his exclusive network of suppliers in Lecce, to handcraft each delicacy. The exterior of the pastry is ingeniously moulded to mimic the lamb’s fleece, with its belly hollowed out and generously filled with a tart homemade pear jam. A light sponge cake, soaked in vanilla liqueur, completes the inner layers, while the almond paste of the outside is intricately piped by hand to achieve the animal’s fluffy appearance. Cocoa-enriched paste is applied for added depth and character, making the Lamb Cake not only a gourmet treat for the tastebuds but also a feast for the eyes and a fitting Easter centrepiece for the table.
Café by day and wine bar by night, Capilungo champions Lecce’s products, focusing on the quality ingredients and provenance. In addition to the mouthwatery bakery section, the menus presents as well a selection of pizzettas and cured meat, cocktails and Apulian wines for aperitivos.
