Chef Joseph Denison Carey takes up summer residency at Boundary Shoreditch

Boundary Shoreditch, a prominent boutique hotel in the heart of London’s vibrant Shoreditch area, is set to welcome chef Joseph Denison Carey for a summer residency. From 5 July to the end of September 2024, Carey, known for his work with The Bread + Butter Supperclub, will be showcasing his Italian-inspired comfort food at the hotel’s ground floor bar and brasserie. The residency will run from Tuesday to Saturday, 6pm until 9pm, offering diners a chance to experience Carey’s unique blend of refined yet accessible cuisine.

Joseph Denison Carey, at 26, has already made a significant mark on London’s culinary scene. Having honed his skills at the Alma School of Italian Culinary Arts and the Michelin-starred Ristorante Gellius in Italy, Carey brings a wealth of experience from his time in some of London’s most celebrated kitchens, including The Water House Project, Pidgin, and Caravel. His summer menu at Boundary Shoreditch promises a selection of dishes designed for sharing, comprising highlights such as Pork and Fennel Polpette in Arrabbiata Sauce, Grilled Onglet with Braised Lettuce, and a special Tiramisu recipe close to Carey’s heart, as made from a recipe learnt from the matriarch of an Italian family he stayed with during his time at Ristorante Gellius.

Carey’s approach to cooking is deeply influenced by his experiences and the time spent with loved ones, aiming to create a dining experience that bridges the gap between the special occasion of eating out and the comfort of a meal at home. “I like people to largely recognise what they see on their table, to be able to relax and enjoy themselves,” Carey stated, emphasizing his desire to offer a menu that is both inviting and familiar to his guests.

Boundary Shoreditch defines a particular dining setting, housed within a converted Victorian warehouse. The hotel features a stylish ground-floor all-day Bar & Brasserie, a Rooftop Bar & Grill with panoramic views across Shoreditch, and 17 individually designed bedrooms, making it a sought-after destination for both locals and visitors alike.

This collaboration marks Carey’s first long-term residency, an opportunity he is particularly excited about given his connection to East London’s dynamic food scene.
