Stuart Ralston celebrates Aizle’s 10th anniversary with a nostalgic five-course tasting menu

Edinburgh-based chef Stuart Ralston is celebrating the 10th anniversary of his debut restaurant, Aizle, with the introduction of a new, shorter five-course tasting menu, reminiscent of their original offerings from a decade ago. This special collection of dishes will be available alongside the current menu options, as a nod to the restaurant’s origins and its journey over the years. Ralston, who has recently seen his latest venture, Lyla, achieve significant acclaim, is marking a notable year with both the anniversary and recent accolades.

Located in Edinburgh, Aizle has been a significant player in the city’s dining scene since its opening. Under the guidance of Executive Chef Ashley Salmon and Head Chef Phillip Roberts, the restaurant is now looking to the future while honouring its past. The anniversary menu is priced at £75, offering patrons a chance to experience the gastronomic journey that Aizle has been on since its inception in 2014.

Stuart Ralston’s culinary career has been marked by international success and a commitment to showcasing the best of Scottish produce through innovative dishes. The concept of a blind tasting menu, focusing on seasonal and local ingredients, has garnered widespread praise and set a precedent for dining in Edinburgh. The restaurant’s relocation in 2020 to the Kimpton Charlotte Square Hotel has allowed for an expansion of its unique dining experience.

Reflecting on the past decade, Ralston expressed his pride in Aizle’s achievements and its impact on his life and career. He said: “The last 10 years have flown by, but without Aizle we wouldn’t be where we are today.I am really happy to see Ash and Phil running the kitchen now I am based at my new home Lyla, they are coming up with amazing new dishes. They care about the things I care about, so the DNA still runs deep of what we do.”

Ralston’s restaurant group has grown to include several other acclaimed establishments, including Noto (launched in 2019), tipo (2023), and the latest addition to the series Lyla (2023). Each venue brings a different aspect of Ralston’s culinary philosophy to Edinburgh’s dining landscape, further establishing his influence and dedication to the industry.
