Abajo to host exclusive Colombian-themed four-hands dinner on 19 August
On 19th August, Abajo, a ten-seat chef’s table located below the Michelin-starred Mayfair restaurant Humo, will host an exclusive all-Colombian four-hands dinner. The event will see Humo’s executive chef Miller Prada collaborate with Juan Quintero, executive chef at the Michelin-starred Il Poggio Rosso in Borgo San Felice, Tuscany. The chefs, both originally from Bogotá, Colombia, will present a tasting menu celebrating their shared heritage, enhanced by pairings of artisan vermouths and aperitivi from Piedmont, Italy.
The dinner is designed to showcase new culinary creations by both chefs, which will be unveiled on the evening to the diners. This event marks another chapter in Abajo’s Amigos de la Casa series, which features collaborations with internationally recognised chefs.
Prada and Quintero, who have carved notable paths in the European culinary scene, draw heavily on their Colombian roots to influence their cooking. The evening’s menu will explore the diverse ecosystems of Colombia, with each course aiming to highlight different regional ingredients through innovative dishes.
The Borgo San Felice, where Quintero has been the executive chef since 2019, is set within a medieval village surrounded by vineyards. Quintero’s cooking philosophy is deeply influenced by the Slow Food movement and focuses on sustainability, which is reflected in his use of local produce and green energy.
In addition to the culinary experience, the dinner will feature a special drinks menu curated by head of bar Angelos Bafas, focusing on high-quality Mancino Vermouth and Rinomato aperitivi, known for their traditional production methods and selection of fine botanicals.
