London to welcome NIJŪ, a new Japanese grill and sushi bar, this April
Japanese Grill & Sushi Bar NIJŪ has officially announced its grand opening on 17th April 2024. Under the guidance of Executive Chef Chris Golding and Head Sushi Chef David Bury, the restaurant has unveiled a menu that is a testament to the art of Japanese cuisine, encapsulating Chef Endo Kazutoshi’s vision of blending the traditional with contemporary innovation. NIJŪ not only boasts a bespoke sushi bar but also features updated dining spaces, a private 16-seater dining room, and a cozy cocktail bar named Nipperkin, designed in a living room style for an intimate atmosphere.
Culinary Director, Chef Endo Kazutoshi, a third-generation sushi master, has curated the programme and menu incorporating his unmatched knowledge, skillset, and wealth of experience of Japanese cooking to two individual industry experts.
The culinary philosophy of the restaurant revolves around Katei Ryori or home-cooked food, offering an informal yet luxurious dining experience. The menu is driven by seasonal produce and experimentation, ensuring each dish is both authentic and inventive. Patrons can look forward to indulging in a variety of Japanese delicacies, including Wagyu Beef Tartare, Tuna Tataki, Iberico Pork with Apple Barley Miso, and the unique Hamachi “bang, bang” Salad, alongside a dessert of Shokupan Pardu with Ginger & Rhubarb.
A highlight of the establishment’s concept is the traditional Konro Grill dishes. The Konro Grill, known for its high temperatures that perfectly trap moisture within the meat, will feature premium selections such as A4 Wagyu Sirloin, Iberico Pork, and Beef Fillet on the bone. NIJŪ takes this traditional cooking method a step further by using a special charcoal mix of binchotan, briquette, and cherry wood to enhance the flavours and create a memorable dining experience.
