Castello di Casole introduces refined dining experience with new tasting menus at Tosca
In the heart of Tuscany, Castello di Casole, A Belmond Hotel, has reopened its doors for the season, introducing a novel and refined culinary direction at its signature restaurant, Tosca. This transformation heralds the arrival of three tasting menus for the 2024 season, marking a significant shift towards fine dining.
The revitalisation of Tosca, which remains the centrepiece of the Castello di Casole experience, has been spearheaded by Executive Chef Daniele Sera and Chef Michele Raggi. The duo, boasting a collaborative partnership of 17 years, has crafted a series of tasting menus that encapsulate the essence of the region. Their creations pay homage to the rich gastronomic heritage of Tuscany, with a special emphasis on ingredients sourced from the Orti del Castello, the estate’s dual vegetable gardens sprawled across one hectare of organically certified land.
The forthcoming season’s menus include I nostri classici, featuring cherished dishes that have been staples at the property for over 15 years; Io 360°, a collaborative effort that melds the chefs’ diverse culinary backgrounds, showcasing dishes from both Tuscan and Ligurian traditions; and Espressione Vegetale, a vegetarian repertoire celebrating the freshest estate-grown produce. All the creations presented are a testament to the chefs’ commitment to sustainability and the farm-to-table concept, emphasizing seasonality, freshness, and a profound respect for raw materials.
From homemade pasta and bread to estate-grown wine, honey, and olive oil, the hotel is on a quest for complete self-sufficiency, producing food in the most sustainable manner possible.
The restaurant itself offers a sophisticated yet relaxed ambiance, with Italian textiles and ancient stone walls setting the scene. In the summer months, guests can also dine in the picturesque outdoor courtyard. The wine list is a celebration of Tuscany’s finest, including local organic and biodynamic wines, alongside selections from other Italian regions and international labels.
