The Aubrey unveils exclusive sake in collaboration with Tsuchida Sake Brewery and Hong Kong counterpart
The Aubrey, the well-known Japanese restaurant located within the Mandarin Oriental Hyde Park in London, has unveiled its exclusive sake label, The Tsuchida Aubrey Junmai, in a remarkable collaboration with Tsuchida Sake Brewery and The Aubrey’s counterpart in Hong Kong. This partnership has culminated in a sake that has been years in the making, embodying a shared commitment to quality and tradition.
To mark the launch, The Aubrey is introducing a Summer of Sake menu, designed to complement the nuanced flavours of their new sake. The dishes will be available in the restaurant’s private dining room throughout the summer, leading up to World Sake Day in October. The menu, curated by Head Sushi Chef Miho Sato, will feature a collection of sushi, sashimi, and robata dishes, each paired with the new sake to perfectly complement the dining experience.
The creation of The Tsuchida Aubrey Junmai represents a fusion of tradition and innovation. Head Sommelier, Maxim Kassir, and Sake Samurai, Natsuki Kikuya, selected the Asahi no Yume rice for its quality and compatibility with the Aubrey’s culinary offerings. The rice is polished to 90%, allowing for a premium Junmai sake rich in umami and savoury notes, with a minimal waste approach in line with The Aubrey’s sustainability ethos.
The sake is characterized by its low alcohol content of 13%, akin to that of white wine, making for a lighter drinking experience. It is brewed using the ancient Kimoto method, which adds depth and balance to the clean beverage, enhancing its acidity and umami flavors. This method is labor-intensive and takes twice as long as modern brewing techniques, but it results in a sake with complex and rich flavors.
The collaboration between The Aubrey London, The Aubrey Hong Kong, and Tsuchida Sake Brewery is symbolized on the sake’s bottle label, designed by The Aubrey Hong Kong’s in-house graphic artist Ayla Leung. The label features a bonsai tree, representing the partnership’s harmony and shared values of celebrating nature and prioritizing high-quality production.
The Aubrey’s beverage programme, which now includes The Tsuchida Aubrey Junmai, offers over 40 types of sake, ranging from rich Junmai to ultra-premium Junmai Dai Ginjo. The sake is available for purchase by the glass, carafe, or bottle exclusively at The Aubrey, allowing guests to enjoy it on-site or take it home.
