Sushi Revolution debuts in Shoreditch
Sushi Revolution has just inaugurated its second outlet located on Curtain Road, Shoreditch. This follows the successful launch of its first restaurant in Brixton in 2021. The brainchild of industry veterans Tom Blackshaw and Aidan Bryan, Sushi Revolution presents a contemporary take on the traditional Japanese Izakaya, blending classic techniques with modern innovations.
The Shoreditch establishment, nestled within the Stage Plaza development, is poised near the future Museum of Shakespeare, set to open in 2025. The design of the restaurant integrates traditional Japanese aesthetics, such as shou sugi ban (charred wood) walls, kintsugi porcelain tables, and a sushi bar crafted from reclaimed wood, creating a sophisticated and welcoming atmosphere. The dining space accommodates 34 guests, with additional window seating and outdoor arrangements that feature Japanese flora, providing a serene atmosphere during the summer months.
At the helm of the kitchen, Tom Blackshaw brings over 15 years of sushi expertise, having previously worked at renowned venues like Aqua Kyoto, Chotto-Matte, and Sticks n Sushi. His culinary style marries traditional sushi making with inventive flavours, evident in dishes such as the soft-shell crab roll with kimchee hummus. Aidan Bryan, with a 25-year tenure in hospitality, manages the front-of-house operations and curates the drinks menu, drawing on his experience from prestigious establishments including Claridge’s Hotel and Gordon Ramsay’s Maze Grill.
The menu at Sushi Revolution is designed for versatility and creativity, offering a range of dishes from spicy edamame with chipotle miso to innovative sushi options and hearty fried classics like Chicken Karaage Nanban. Vegan diners are well-catered for with stand-out courses such as Fried Japanese Aubergine. The restaurant also places a strong emphasis on sustainability, with all takeaway packaging being recyclable.
Beverage options complement the dining experience, featuring a selection of beers, wines, and sake, ranging from an affordable house serve to premium bottles for special occasions. A concise cocktail list, created in partnership with Dalston’s Soda, presents refreshing choices like the Hanami Highball and Ichiban Iced Tea.
Tom Blackshaw commented on the London expasion: “We aim to serve great food and drinks, quickly, in a great venue, with great service at a great price! Not always easy but hopefully, if we can do that our guests will keep coming back” .
