Original recipe of the week: Spinach pasta stir-in
On a cold evening there’s nothing better that curling up on the sofa with a bowl of stodge – but it doesn’t have to be unhealthy. Our pasta sauce is delicious, healthy and will satisfy your hunger. Packed with health-boosting spinach and fat-free quark, it just can’t go wrong (just don’t serve on Easter Sunday).
Spinach pasta stir-in
Cooking time: 5-10 minutes
What you will need:
4 handfuls of freshly washed spinach
200g quark
100g almonds
1tsp chopped thyme leaves
1tbsp fresh lemon juice
1tbsp almond oil
Salt and pepper to taste
What you need to do:
- Place the almonds into a food processor with the oil and blitz until smooth.
- Next add the spinach, lemon juice and thyme leaves, and blitz again until combined.
- Now all you need to do is add in the quark and pulse until combined – don’t blitz at this point, as you don’t want the mix to be too smooth.
- Add salt and pepper to taste and you’re ready to go. Stir into your favourite cooked pasta, and enjoy with a sprinkling of parmesan on top.
